REJOICE! My cooking slump is over! If you tuned in last week, then you already know all about my kitchen woes the past few weeks. If not, to make a long story short, I was just pretty much not in the mood for anything healthy and totally sick of food altogether. But this week that has all turned around, and I owe it all to this pretty little lady, Cassy Joy Garcia and her new Fed and Fit cookbook!
I have been in a serious eating funk the past few weeks. On a normal day, I take the last bite of my breakfast as I glance over at the clock to see how many hours it will be until I can eat again. I think about eating dinner as I’m eating lunch. Eating is probably my favorite thing to do.
But not lately. Nothing, and I mean NOTHING that even resembles a healthy meal is appealing to me whatsoever. I’ve been literally forcing myself to eat these beautiful meals that on any other day, I would look at and be psyched to chow down on. Now hand me a slice of pizza and it’ll disappear before you can blink. But the healthy stuff? Forget it.
I’m not the type of person who views healthy options as “health foods” either. It’s just food to me. I actually like eating these things normally. There’s just some outside force that wants me to walk over to McDonald’s on my lunch break and order a big mac and large fry, and I don’t know why.
Anyway, on a normal Sunday I make a big breakfast for my fiance and I, and then hop on to Pinterest or whatever site I’m into at the time and plan out a weeks worth of dinners. I make my list and head off to the grocery store to shop for the week. This past Sunday was no different. Except when it came to actually making and eating the dinners I had planned, I wanted nothing to do with it. I choked down every bite, poking at my food and pushing it around my plate like a two year old. At one point this week, I actually was considering collecting all of the little odds and ends of ground meat in my freezer, cooking it up and eating it with ketchup. That was honestly the only thing that sounded remotely appetizing to me.
So in an effort to make a meal that I could actually enjoy eating, I threw together this awesome taco skillet. Tacos just never get old. And I actually liked this dinner so much, that I ate it for lunch again the next day! Here’s the super simple recipe:
- 1lb lean ground beef
- 1 yellow onion, chopped
- 2 green peppers, chopped
- 1 large zucchini, chopped
- 1 can diced tomatoes with chilis
- 1-2 tbsp low sodium taco seasoning
- 1 cup fiesta blend cheese
- 2 green onions, chopped
- Lightly brown the ground beef and zucchini together. Add the peppers and onions and cook until soft
- Add the taco seasoning and diced tomatoes, adding a little water if needed to fully coat the meat and veggie mixture. Let simmer about 5 minutes.
- Sprinkle cheese on top and cover until cheese is melted and bubbly
- Top with green onions
That’s it! So easy and so delicious and an awesome way to sneak in some veggies. If I had sour cream or avocado, I definitely would have topped this off with one or the other. Or both. This makes about 3 servings in my house, but could makes more than enough to serve 4.
